More attention is being given to what is actually inside the cup. The origin of the beans, the way they are roasted, the grind, the extraction, the equipment and the knowledge of the barista are becoming part of the experience, rather than details hidden behind the counter.
At Mandala, we want to be part of that change while keeping what people already come to us for: healthy food, warm hospitality, relaxed spaces and places that feel connected to the city around them.

So, What Does Specialty Coffee Actually Mean?
The expression is used more and more, but specialty coffee is not simply another name for an expensive espresso or a beautiful latte. It starts with the coffee itself.
Quality, origin, processing, roasting and the characteristics of the bean all influence what eventually ends up in the cup. The Specialty Coffee Association today takes a broad approach to evaluating coffee, considering both its physical and sensory qualities as well as characteristics such as origin and processing.
But a great bean is only the beginning... The same coffee can taste very different depending on how recently it was roasted, how it is ground, the water used, the extraction and the person preparing it.
That is why we prefer to think of specialty coffee as a chain of small decisions, all made with the same objective: getting the best possible expression out of the coffee.
A Great Bean Is Only the Beginning
There are a few things that make a real difference once coffee reaches the bar.
The beans
Origin, variety, processing and roast profile influence everything from sweetness and acidity to body and aroma. At Mandala, our renewed coffee programme is being developed in collaboration with LOMI Café, a specialist coffee roaster that has been working with hospitality professionals for 15 years. LOMI combines artisanal roasting with professional equipment and barista training.
The grind and extraction
Coffee needs to be ground specifically for the way it will be prepared. Small adjustments can completely change how quickly water travels through the coffee and, ultimately, how the espresso tastes.
The equipment
Professional equipment helps baristas control temperature, pressure and consistency from one coffee to the next. As part of Mandala's renewed focus on coffee, our setup is also evolving towards professional La Marzocco equipment, giving our teams the tools needed to work with greater precision and consistency.

And then there is the human part. Good equipment cannot replace knowledge. A barista needs to understand the grinder, extraction, milk texture and recipes and adjust them throughout the day.
LOMI places particular emphasis on this combination of beans, equipment and training, including espresso recipes, grinder settings and latte art.
That philosophy feels very familiar to us at Mandala: good ingredients matter, but so does what you do with them.
Why Specialty Coffee Makes Sense in Marrakech
Marrakech is a city built around hospitality. Breakfasts turn into brunches. Lunches stretch a little longer than expected. A walk through the Medina becomes an excuse to stop somewhere for a drink. It makes sense that coffee expectations are changing too.
Visitors who care about where their food comes from increasingly pay the same attention to what they drink. At the same time, Marrakech's restaurant and café scene continues to become more diverse. Coffee is no longer necessarily something served at the end of a meal.
It can be the reason for the visit itself.

Choosing better coffee also means choosing the right people behind it. LOMI's approach is built around three elements: coffee, equipment and training. Their coffees are artisan-roasted, while their work with hospitality businesses also covers professional machines and practical barista training.
That combination is important to us. A premium bean alone does not guarantee a premium cup. Consistency comes from understanding the complete process and giving the team behind the bar the knowledge and equipment to work properly.
